(vegan, gluten free)
The only vegan and gluten free caesar dressing you’ll ever need! This recipe is super simple, perfect on a salad or even in a wrap or sandwich. Enjoy!
- 1 cup soaked cashews
- 1/2 cup water (plus another 1/2 cup for soaking the cashews)
- 2 tbsp lemon juice
- 2 tsp garlic, minced
- 2 tsp dijon mustard
- 1 tsp red wine vinegar*
- 1/4 tsp black pepper
- dash of salt
BEFOREHAND: Soak the cashews in 1/2 cup water overnight or for a few hours before making!
- Add the soaked cashews (dispose of the old water, use it to water your plants, etc!) and fresh water to a small food processor or blender, and blend until super creamy.
- Add the rest of the ingredients, and pulse or mix with a spoon until well combined.
- Store in the fridge for up to a week in a mason jar or other container!
*You can sub with white wine vinegar also, I just like the flavour of the red! If you don’t have either, regular vinegar will work.
