Easy Strawberry Lime Granita Recipe

(vegan, dairy free, gluten free, nut free)

If you’re looking for THE most refreshing summer frozen dessert, stop what you’re doing right now and make this easy strawberry lime granita recipe! It only takes 4 basic ingredients and the bulk of the work is done by the freezer. It’s basically magical pink ice fluff (which sounds like a character out of My Little Pony, but hopefully you get the idea). Perfect for a hot summer day!

What is granita?

If you’ve never had granita before and you love frozen fruit desserts, you’ll be thanking yourself after you try this recipe! Granita is a fluffy yet crunchy Italian dessert with a texture similar to shaved ice. You make it by blending together water, fruit juices, and sugar, freezing it, and then scraping the ice crystals with a fork.

Ingredients you’ll need for this Easy Strawberry Lime Granita Recipe:

  • frozen strawberries
  • water
  • agave syrup
  • lime zest

How do you make Strawberry Lime Granita?

It’s easy as 1-2-3 (literally):

  1. Blend together frozen strawberries, water, agave syrup, and lime zest until very smooth.
  2. Pour into a loaf pan, then cover and freeze for 4-6 hours until solid.
  3. Once frozen, scrape with a fork to create a fluffy & icy texture. Serve immediately (it melts fast)!

What is agave syrup?

Agave syrup comes from the desert “Agave” plant (makes sense!). It’s similar to maple syrup and honey in that it’s a liquid sweetener used in many recipes. However, I find agave to be the sweetest of these three sweeteners and the least viscous (the most watery).

Why use agave syrup in this recipe?

Typically, granita is made using simple syrup (a combination of water and granulated sugar). There is nothing wrong with simple syrup, and you can absolutely use it in this recipe, I just find agave syrup more convenient (i.e. I didn’t want to dirty another dish!).

I tried using honey in this granita recipe and two things happened: 1) I didn’t find it sweet enough (maybe that’s just my sweet tooth talking…), and 2) the honey didn’t dissolve well in the cold mixture. Using agave solved these two problems!

NOTE: If you only have maple syrup and/or don’t want to go out and buy agave syrup for this recipe, you can definitely use it. Just keep in mind that the end result won’t be as sweet (which you might prefer, who knows!).

Is granita vegan, gluten free, and/or nut free?

Yep! This easy strawberry lime granita recipe is entirely vegan, dairy free, gluten free, and nut free. No extravagant substitutions needed!

How do I store leftover Strawberry Lime Granita?

Since this is a frozen dessert, you’ll need to store any granita you didn’t eat in the freezer. When you’re ready to eat it again you just have to re-scrape it with a fork to revive it’s fluffy texture!

Description

Say hello to the most refreshing summer frozen dessert recipe you’ll ever make! This easy strawberry lime granita recipe is super simple and entirely vegan, dairy free, gluten free, and nut free.

Ingredients

Scale
  • 2 cups frozen strawberries
  • 1 1/4 cup water
  • 3 tbsp agave syrup*
  • zest of 1 lime

Instructions

  1. Add the frozen strawberries, water, agave nectar, and lime zest to a blender. Blend until well combined and very smooth (no lumps, should be quite liquidy).
  2. Pour mixture into a loaf pan, flat baking sheet, or freezer safe container (don’t fill it completely to ensure extra space for the ice to expand!). Freeze until solid (around 4-6 hours depending on the temperature of your freezer – I usually begin freezing in the morning or the night before).
  3. Once frozen, scrape with a fork until fluffy & icy granita forms! Serve immediately and store any leftovers in the freezer.

Notes

*You may substitute the agave syrup with maple syrup, just note that it will be less sweet!
