Guacamole with Baked Pita Chips

(vegan, nut free, can be gluten free)

This guacamole recipe is super easy, creamy, and pairs perfectly with some homemade pita chips! It’s a great snack or appetizer when you have extra avocados kicking around and don’t want them to go bad. This recipe is also very versatile; you can add or remove ingredients at your leisure (just maybe not the avocados…?) and have some fun playing around with different variations!

How do I make homemade guacamole?

All you need are the ingredients, a knife, a bowl, and a fork. Simply mash the avocados in the bowl, mix in the chopped ingredients, and enjoy!

How can I make the baked pita chips gluten free?

There are a couple options here: 1) Use gluten free pita bread, or 2) Use store-bought gluten free crackers/chips!

This guacamole recipe is super easy, creamy, and pairs perfectly with some homemade pita chips!

FOR THE BAKED PITA CHIPS:

  • 24 whole wheat pitas

FOR THE GUACAMOLE:

  • 2 avocados
  • 1/2 cup fresh tomatoes, diced
  • 2 tsp garlic, minced
  • 1 tbsp red onion, minced
  • juice of 1/2 a lime
  • 1/4 cup cilantro, finely chopped
  • 1/4 tsp salt
  • fresh ground pepper

Instructions

  1. Make the baked pita chips: Preheat oven to 325F. Cut each pita into 8 triangles and place on baking sheet. Bake for 10 minutes.
  2. Make the guacamole: Remove the pit from the avocados and place the flesh in a medium bowl. Mash with a fork.
  3. Mix in tomatoes, garlic, red onion, lime juice, cilantro, salt and pepper.
  4. Serve with baked pita chips and/or vegetables. Store in an airtight container in the fridge for a couple days. Keep in mind that avocado browns overtime, but this won’t affect the taste of your guacamole!

Notes

Make it gluten free: Use gluten free pita bread, or store-bought gluten free chips.
