What is granita?

Granita is a fluffy yet crunchy Italian dessert with a texture similar to shaved ice. You make it by blending together water, fruit juices, and sugar, freezing it, and then scraping the ice crystals with a fork.

How do you make Strawberry Lime Granita?
It’s easy as 1-2-3 (literally):
- Blend together frozen strawberries, water, agave syrup, and lime zest until very smooth.
- Pour into a loaf pan, then cover and freeze for 4-6 hours until solid.
- Once frozen, scrape with a fork to create a fluffy & icy texture. Serve immediately (it melts fast)!
What is agave syrup?
Agave syrup comes from the desert “Agave” plant (makes sense!). It’s similar to maple syrup and honey in that it’s a liquid sweetener used in many recipes. However, I find agave to be the sweetest of these three sweeteners and the least viscous (the most watery).
Why use agave syrup in this recipe?
Typically, granita is made using simple syrup (a combination of water and granulated sugar). There is nothing wrong with simple syrup, and you can absolutely use it in this recipe, I just find agave syrup more convenient (i.e. I didn’t want to dirty another dish!).
I tried using honey in this granita recipe and two things happened: 1) I didn’t find it sweet enough (maybe that’s just my sweet tooth talking…), and 2) the honey didn’t dissolve well in the cold mixture. Using agave solved these two problems!
NOTE: If you only have maple syrup and/or don’t want to go out and buy agave syrup for this recipe, you can definitely use it. Just keep in mind that the end result won’t be as sweet (which you might prefer, who knows!).
