Granola Cluster Cookies: Half granola - half cookie, this recipe is the perfect balance of crunch and chew (if I do say so myself)! It's like a granola bar in the shape of a cookie, but one that you can make at home with minimal ingredients. I've had these on repeat for the last two weeks and it's only just begun...

Roasted Butternut Squash & Carrot Soup is now on the blog! This creamy, smooth soup packs tons of flavour, and is a great way to incorporate squash into your meals! The roasted butternut squash and carrots add a subtle sweetness, which is balanced with warm notes of ginger, turmeric, and cumin. This recipe is also vegan, gluten free, and nut free.

Made another couple batches of the Rocky Road Cookies this weekend! These have been on the blog for a while, but are still a favorite of mine.

Cake you can make in the microwave... enough said, but I'll go on. This Chocolate Chip Mug Cake is fluffy, spongey, light, simple, and fits perfectly into your favourite mug. I have to say though, taste/texture aside, my favourite part of this recipe is watching it magically puff up in the microwave (without an egg!). She can be vegan, dairy free, gluten free, or nut free (notes for all are on the blog post).

As we get back to school and work, these Oatmeal Cookie Energy Balls are one of my personal favourite snacks for on-the-go! And the recipe could not be easier, just mix everything up in a bowl, pop in the fridge for 30 minutes, and roll into balls! They are also super customizable. You can use different nut or seed butters and mix up your mix-ins – dried fruit, coconut, chocolate chips, or none!

Breakfast Tacos with Spicy Cashew Sauce are now on madebymeg.ca! 🌮 May I start out by saying, this is one of my favourite recipes on here so far for so many reasons. First of all, who doesn't love tacos? Or breakfast for that matter? And if you don’t, I gotchu - make this into a wrap instead, or a scramble with a side of toast! These guys can easily pass for lunch or dinner, also. Second, they are entirely customizable. I enjoy these with a tofu scramble, but you can easily make them with lentils or even eggs. And then there are the mix-ins and toppings and sauce options - the possibilities are endless!
